Roast Chicken and Stuffing Casserole

Stuffed Chicken and Rotisserie Casserole
1 package baking stuffing mix (or more if desired)
1 whole chicken, cooked and shredded
1 ½ cups water or chicken stock
¼ cup butter
3 celery sticks, diced
1 onion, diced
1 can cream of chicken soup
½ can mushroom soup
8 ounces sour cream
salt and pepper to taste
How to make the chicken rotisserie casserole stuffing
Preheat the oven to 350* and spray a 9 x 13 baking pan lightly with cooking spray
. Bring water (or chicken stock) to a boil in a medium saucepan. When the liquid boils, add the filling mixture.
Remove the pan from the heat, cover and set aside. After cooking, mash with a fork.
Heat butter in a pan, add onion and celery, fry until soft.
Mix soups and sour cream in a bowl.
Arrange the sliced chicken on the bottom of the baking dish, distribute the onion and celery on top of the meat.
Salt and pepper
Pour the soup mixture over the onion and celery
Sprinkle with the filling
Bake in the oven for 1 hour until golden brown.
